--Check the husk. Corn's natural wrapping protects the kernels from drying out and indicates its freshness. Moist, green husks are clearly fresher than dry brown ones.
--Inspect the tassle. Those silky strings at the tip of the ear should be golden brown -- a pale tassle is an indication that the corn was picked too early.
--Feel the kernels. Peeling back the husk can dry out the corn. So to check for freshness, feel through the husk for plump, resilient kernels.
--Don't linger. If you can't eat it right away, chill the ears, in their husks, in a plastic bag up to two days.
